Ingredients

  • 150g beef (sirloin, tenderloin, etc.)

  • 100g sweet potato noodles (dangmyeon)

  • 1/2 onion

  • 1/2 carrot

  • 2-3 shiitake mushrooms (or oyster mushrooms)

  • 1 handful spinach

  • 1 green onion

  • 1 tablespoon minced garlic

  • 1 tablespoon sesame oil

  • 2 tablespoons soy sauce

  • 1 tablespoon sugar

  • A pinch of black pepper

  • 1 tablespoon sesame seeds

  • Cooking oil as needed

Preparation

Step 1

Prepare the beef:

  • Slice the beef thinly.

  • In a bowl, mix the beef with 1 tablespoon soy sauce, 1/2 tablespoon minced garlic, 1/2 tablespoon sesame oil, and a pinch of black pepper. Let it marinate for 10 minutes.

Step 2

Prepare the sweet potato noodles:

Boil the noodles in hot water for about 6-7 minutes, then rinse with cold water to stop cooking. Drain well and cut them into appropriate lengths with scissors.

Step 3

Prepare the vegetables:

  • Slice the onion and carrot thinly. Cut the green onion into small pieces.

  • Slice the mushrooms, and blanch the spinach in boiling water for a few seconds, then rinse with cold water, squeeze out the excess water, and cut it into 3 cm pieces.

Step 4

Stir-fry the beef:

  • Heat some cooking oil in a pan and stir-fry the marinated beef on medium heat. Cook until the beef is almost fully cooked, then remove from the pan and set aside.

Step 5

Stir-fry the vegetables:

  • In the same pan, add more oil if needed and stir-fry the onion, carrot, and mushrooms. When they are slightly softened, add the green onion and spinach, and stir-fry together.

Step 6

Stir-fry the noodles:

  • Add the cooked noodles to the pan with the vegetables. Add 1 tablespoon soy sauce, 1 tablespoon sugar, and 1 tablespoon sesame oil. Stir-fry everything together well.

Step 7

Combine the beef:

  • Add the cooked beef back to the pan and stir-fry until all the ingredients are well mixed.

Step 8

Finish:

  • Season with sesame seeds and black pepper, then stir everything together one last time.

Step 9

Serve:

  • Transfer the finished Beef Japchae to a serving dish and enjoy!
